EXECUTIVE CHEF OSCAR DIAZ

Two-time James Beard semifinalist Oscar Diaz, executive chef behind Durham, NC-based eateries Aaktun AND LITTLE BULL doesn’t believe in conventionality. His approach

to the culinary arts pays homage to the experiences that have led him to where he is today.


Diaz’s whimsical yet equally polished culinary style dubbed “Pocho” cuisine, is the matrimonial union of his family's Mexican heritage, his Chicago roots, his experiences working in several Michelin-starred kitchens out West, and now, the flavors common to his home down South. Each concept spearheaded by Diaz lends itself to his authentic individuality which is anything but status quo.


Following two James Beard recognitions at the Raleigh-based seafood restaurant Cortez, Diaz made a distinguished entry into the Durham market with the opening of Little Bull in 2023. Building on the eatery’s steadfast momentum and several “best of” acknowledgments, Diaz and long-time business partners Mezcalito Inc., expanded their footprint in 2024 with the opening of Aaktun. The dual café-eatery concept allows Diaz to further explore his culinary EXPRESSIVENESS through pairings of bold flavors and textures throughOUT the essence of his menus.
